No matter what part of the world you live in people are becoming increasingly interested in health and lifestyle.  This last weekend the Wellness & Lifestyle EXPO was held at the Arena Nova in Wiener Neustadt, Austria.  There were tons of cool products to look at and ideas to ponder.  Many vendors had products to sample.  Of course, being in Austria this includes some wonderful wines from the local farmers!


I was able to chat with one of the ladies manning this booth for A & G Gober Weingut as she spoke terrific English ... what a treat for me ... a delightful taste of wine and a good conversation!


Then we met Fritz Muehle who produces AWESOME pumpkin seed oil ... in German it is called Kürbis Kernöl.   This thick, tasty green oil is coveted by connoisseurs around the world! With its special nutty taste, many chefs like to use to complete sophisticated dishes.  Fritz does it the old fashioned way by stone grinding the special pumpkin seeds ... this way it is truly cold pressed and retains all those terrific nutrients.

Pumpkin seed oil has a high content of polyunsaturated fatty acids and is rich in vitamins, such as vitamin A, B, C and E ... it also contains important minerals such as calcium, iron, magnesium and trace minerals selenium and zinc.  What a way to lead a delicious and healthy lifestyle!

We wandered more and enjoyed all the EXPO had to offer ...  from growing your own sprouts to enjoying a Shiatsu massage ...

Health & Lifestyle - Chestnuts for Healthy Lifestyle!

Autumn is here, the air is crisp and I crave something warm and hearty.  What better way to welcome the change of seasons than to roast some chestnuts?  Chestnuts are a great addition to your health and lifestyle.  What is more romantic than roasting chestnuts over an open fire and sipping on a delicious wine?

A friend brought us over a large bag of these prized nuts from his parents farm and what a treat it was.

Best way to roast Chestnuts:

I have tried many ways to to roast these guys and the best method I have found is to wash, score an "X" in the flat side with a sharp knife, soak in water for about 30 minutes then pop into a 450F/220C oven.  I keep watch over them so they don't burn and monitor them as the shell peels back ... usually about 1/2 hour.


Once you remove them from the oven be careful not to burn your fingers while you peel them completely.  We enjoyed pairing the roasted chestnuts with an Austrian Blaufrankisch wine from the Burgenland region of Austria ... actually right down the road from us!

Benefits of Chestnuts:



  • Chestnuts are relatively low in calories and are rich in minerals, vitamins and phyto-nutrients that benefit health.
  • Chestnuts are mainly made up of starch unlike other seeds and nuts, which are high in calorie, protein, and fat. They are similar in nutrition composition to sweet potato, sweet corn, potatoes and plantains. They are  good sources of minerals, vitamins and some good  quality protein.
  • Great source of dietary fiber. Fiber diet helps lower blood cholesterol levels by limiting excess cholesterol absorption in the intestines.
  • Exceptionally rich in vitamin C. ... 100 g nuts provide 43 mg of vitamin C. Vitamin C is essential for matrix formation in teeth, bones and blood vessels. Being a strong anti-oxidant, it offers protection from harmful free radicals.
  • Chestnuts are rich in folates ... 100 g nuts provide 62 µg of folates (or 15.5%). Folic acid is required for the formation of red blood cells and DNA synthesis. 
  • Terrific source of mono-unsaturated fatty like oleic acid  and palmitoleic acids. Studies suggest that monounsaturated fats in the diet help lower total as well as LDL (bad cholesterol) and increase HDL (good cholesterol) levels within the blood. 
  • Excellent source of minerals such as iron, calcium, magnesium, manganese, phosphorus and zinc, besides providing a very good amount of potassium.  Potassium helps counter hypertensive action of sodium, lowers heart rate and blood pressure. 
  • Rich in many important B-complex groups of vitamins. 
  • Chestnuts are free in gluten. And for the same reason, they are one of the popular ingredients in the preparation of gluten-free food formulas for gluten-sensitive, wheat allergy, and celiac disease patients.



Chestnuts offer a great deal of nutrition when you are striving for health and lifestyle.  Of course, it is always best to eat local fresh food ... food that is in season to get the highest quality nutrition.

Would you like to live a healthy lifestyle? Imagine waking up in morning, feeling terrific and ready to jump into the new day with a clear mind and boundless energy … what could be better?

Enhancing your lifestyle with good health doesn’t have to be a major upheaval; in fact to turn your life around in one giant step is setting yourself up for failure.  The best way to begin this journey is with “baby” steps.  Begin with one change and do it long enough that it becomes a habit … at least 21 days the experts say and then add another one.  Soon you will wonder why you didn’t do this before!  You will soon be enjoying the health and lifestyle that you desire.

So my friends, here is the first tip to begin your new healthy lifestyle:

Drink Water!  Now this is really is a no-brainer, but for many is a giant obstacle.  Experts say you should drink at least 64 ounces a day … that is 1/2 gallon for those of you wondering or 8 -  8 ounce glasses … it is almost 2 liters for those of you in countries that use the metric system.  Drinking more than 64 ounces is even better!

Drinking alkalized / ionized water is the best for your body.  The benefits of alkaline water include:

Allowing your body to assimilate water better and hydrate faster because of the smaller cluster size of the water molecules
Refreshing and thirst quenching
Aids in restoring your body to its ideal alkaline pH balance
Promotes an internal alkaline environment which takes up oxygen better and helps to guard against cancers and other degenerative diseases
Helps to flush toxins and neutralize acid wastes from the body.
Boosts your energy level and improves aerobic exercise. You will also notice that your recovery times are quicker after exercise.

The best way to get alkaline water is from an alkalizing/ionizing water machine.  They sell these for $800 on up to over $4,000.  It may seem pricey, but think of the price of bottled water.  It adds up pretty quickly and in addition, having a water machine of your own saves the planet from all the plastic water bottles that is cluttering our landfills.

There are special pH powders and drop’s that you can buy to increase the alkalinity of your tap water … is this something you should try?  While they do increase the pH of your water, the jury is still out on whether they actually hydrate your body as well as the alkalized/ionized water from a water machine.  Some experts say that the water molecules created are too large to be assimilated for the best hydration.  These powders also do not remove anything from your water like chlorine or fluoride.  Both of these chemicals are not something I care to ingest  … and by the way … sometimes the taste of these powders are pretty bad … kind of like drinking sea water, but that is just my personal opinion.

Now you may be thinking that drinking RO (reverse osmosis) or distilled water is an option.  The best answer here is that both processes remove the valuable nutrients from the water leaving it basically dead and acidic.  Yes, it will quench your thirst, but you won’t be getting any of the other goodies that your water should supply.  It won’t restore your body to its proper healthy pH and it won’t enrich your body with valuable nutrients like alkaline water will.

What about bottled water you ask?  My answer is that while it can be convenient, you really don’t know what is in it.  Did the manufacturer turn on his water tap at the factory and fill up those plastic bottles?  Maybe they get their water from the local river … better hope that a pig farm or such isn’t located up stream.  What has the water been treated with, if anything? Is it any better than turning on your own water tap that is filled with whatever chemical soup that your local municipality dreamed up?  Bottled water is popular because the manufacturers have spent a ton of money on marketing and not because it is good for you.

Perhaps you are living in an area where water is supplied by your very own well.  Well water needs to be tested very carefully for nutrients, pH and any other “cooties” before you begin to drink large quantities of it.  The government does not regulate these water sources, and therefore, you need to pay close attention to the safety of your drinking water.  Many times the groundwater that fills these wells can become contaminated with pollutants. Minerals can be picked up from the rocks that your water flows over, and don't forget there can also be run off from any number of sources that seep into groundwater. Things like microorganisms, heavy metals, lead, copper, household waste, fluoride and more can all be found in traces in ground water.

I realize that all this water information is probably a lot to “swallow” (pun intended), but drinking water is one of the BEST tips in discovering your new healthy lifestyle.  Drink plenty of fresh alkalized water each day and soon you will feel amazing!

Health and Lifestyle - Milk in the Raw!

Health and Lifestyle have you ever tried milk in the raw ... er ... drinking raw milk, that is ...

We have a local farmer just down the street from us that has a few cows and actually has a raw milk vending machine right there!  Known by everyone (he also owns the local taxi company) folks just bring their own jug and for €1 you walk away with a little over a liter of fresh cold milk.


Now, I must say that I have never been a big milk drinker, but this stuff is very tasty.  Rich and creamy it is nothing like the milk you buy in the grocery store ... heck ... you can even buy milk in the store that doesn't even need refrigeration ... what is that all about?

The Austrian government comes in and tests for quality every couple of days and what he doesn't sell that day to the locals gets picked up and goes to the big dairy where is goes through the pasteurizing, homogenizing process.

Because the vending machine is right there next to the cow "house" you can really see what goes on.  The picture here shows that the "ladies" are in for the night, but many times they are out and about ... munching on grass or hay.  Heck, they even have names with their information posted on the wall!


I recently watched a YouTube video where the authorities in California arrested a gentleman for selling raw milk ... very scary stuff ... isn't it about time we take control back over our own lives?  The man that was arrested was a local farmer known by everyone ... his good farming practices were  an open book ... yet his milk was dumped down the drain.  What a shame ...

On my quest for a new healthy lifestyle I prefer to take responsibility for my decisions about whether or not to drink raw milk.

Health and Lifestyle ... did YOU eat your sprouts today?  In my opinion a sprout a day is better than an apple a day for keeping the doctor away and leading a healthy lifestyle!

Sprouting is really a no-brainer ... and is quick and easy to do. Sprouting supplies for the most part are free (except for the seeds).  Soon you will be crunching your way through all that sprout goodness!

Why sprout?

When seeds start to sprout, the nutrients begin to change ... complex compounds such as carbohydrates begin to break down into simple sugars , proteins break down into amino acids, and the fats into fatty acids. Enzyme inhibitors  that enable a seed to remain inert yet viable for years are neutralized by sprouting, and the enzyme and vitamin content is increased, most notably the B vitamins.

A sprouting seed is transformed from a long term storage unit for starches into a living plant full of digestive enzymes, amino acids, and simple sugars. The nutrient content increases up to 1200% after sprouting, and your body can readily assimilate the organic compounds in the sprouts. As the sprouts turn green with exposure to light, chlorophyll is developed in these baby plant sprouts, making them a superfood  packed with nutrition.


Supplies:


  • cheesecloth or stainless steel screen ... I use a plastic sieve
  • quart sized mason jars
  • a tray to stand the sprouting jars in
  • rubber bands or a canning ring to hold the cheesecloth or screen in place
  • a selection of seeds, beans, or grains ... organic is best!
  • Some place on a counter out of direct sunlight
  • 5 to 10 minutes each day to care for your sprouts


How to Grow Sprouts:

Fill a jar with water (filtered or spring water is preferable). For alfalfa, clover, or other small seeds, put two tablespoons of seeds in the jar and let soak in the water for 8 hours. Beginning the soaking process at night develops an easy rhythm for daily maintenance, checking them in the evening and again in the morning.

After the soaking time is up (in the morning, if started at night), empty the water out and rinse the seeds with fresh water (I like to rinse at least twice each time). Cover the mouth of the jar with a square of cheesecloth or sprouting screen and set the jar upside down in a tray or bowl (to catch any water that will drain out). I always lean the jar against something at an angle to ensure a flow of fresh air to the sprouting seeds.

Rinse the sprouts every 8 to 12 hours by filling the jars part way with water and then draining them thoroughly. The water from soaking and rinsing the sprouts is great for houseplants, gardens, or your compost pile. When the sprouts have reached the size you prefer for eating, rinse them thoroughly and place in the refrigerator until you’re ready to eat them. They will keep just fine for a couple of days (up to a week).

Most sprouts are edible as soon as you see a  root popping out from the seed, but you can let them grow as long as you want. Alfalfa and clover will fill the jar so completely that you’ll have a hard time getting them out, so don’t let them go too far.

Soaking times & quantity of seeds for sprouting in a pickle jar:


  • Alfalfa seeds: Soak 2 Tbs for 4 to 8 hours
  • Clover seeds: Soak 2 Tbs for 4 to 8 hours
  • Broccoli seeds: Soak 2 Tbs for 8 to 12 hours
  • Whole lentils: Soak 1 cup for 8 to 12 hours, then eat
  • Fenugreek seeds: Soak 1/4 cup for 4 to 8 hours
  • Radish seeds: Soak 3 Tbs for 4 to 8 hours
  • Raw hulled sunflower seeds: Soak 1 cup for 6 to 8 hours, then eat
  • Chia seeds: Soak 1 cup for 6 to 8 hours, then eat
  • Sesame seeds: Soak 1 cup for 6 to 8 hours, then eat
  • Wheat berries: Soak 1 cup whole wheat berries for 8 to 12 hours
  • Rye berries: Soak 1 cup whole rye berries for 8 to 12 hours

OK, so I guess I am hooked on sprouting.  My kitchen looks like a science project running amok with my pickle jars scattered about and little green sprouts in all forms of growth!  Eating healthy is a prime concern to improve health.

What could be better for a healthy lifestyle than to scoop up a handful of these healthy, tasty treats and sprinkle them over a salad or pop them in a quick stir fry?

Health and Lifestyle - Alkaline Water for a Healthy Lifestyle!


Water is an incredible beverage and it critical to a healthy lifestyle.

Our new alkaline / ionizing water maker.  We just got this baby and let me tell you the water tastes WONDERFUL!  Fresh and clean tasting, it is my new best friend.  This particular unit also gives you acidic water which is terrific for watering your plants, cleaning hard surfaces like your counter tops (no more chemicals) and splashing on your face like an astringent.


Most people know that tap water isn’t good for them. In order to kill parasites and bacteria in water, governments add other possibly even more alarming chemical agents and pathogens such as chlorine, carbon, phosphates, aluminum sulfate, and lime. Most municipal water supplies also contain some or all of the following toxic chemicals: radon, arsenic, fluoride, and heavy metals, such as copper, lead, and iron.  I don't know about you, but I don't want that stuff going into my body!

Why should we rethink bottled, reverse osmosis, and distilled water?

  • Some sources of bottled water are NOT from actual springs with naturally mineralized water. Many companies are now simply bottling tap water, for convenience. 
  • Those who purchase bottled water are contributing to over 1 million plastic bottles going to landfills every day. 
  • Risk health effects from chemical toxins called phthalates that are sometimes added to plastics to give them flexibility.

Phthalates function like hormones, disrupting endocrine systems in humans. According to Dr. Rolf Halden of Johns Hopkins Bloomberg School of Public Health, if you heat plastics, phthalates leach from containers into water and food. Of course, water bottles are stored and transported in hot warehouses and trucks, which increases that likelihood. Bottled water should be avoided, and water should be contained in inert materials like glass, ceramic, or stainless steel.

Many people believe, myself included until recently, that a reverse osmosis (R.O.) water filter was the best way to address these issues, as it removed about 99 percent of these contaminants. Others people drink distilled water, which removes 100 percent of the nutrients.

Unfortunately, your R.O. system or distiller cannot differentiate between good compounds and bad. They categorically remove dozens of trace minerals from the water that are critical to your health.

Health and Lifestyle - Bio Organic Garden Explodes!

Health and lifestyle ... how you decide to live your life is up to YOU ... I choose to live a healthy lifestyle.

Our "Bio" organic garden has simply exploded!  The zucchini and squash have taken over and I truly wouldn't be surprised if one morning I hear a knocking sound on the window and find the pumpkin runners wanting to come in for a cup of tea and a quick chat!


Yes, those really are pumpkins hiding under those leaves!



The cherry tomatoes that we planted have us eating tomatoes in every way, shape and form ...


... and we have mystery squash that are gigantic!  My husband thought it was a butternut squash seed that he planted, but ????


Healthy eating for our new lifestyle is a must and we have a new saying at our house ...

The word health in German is "gesundheit" ... yes, like the blessing you give when someone sneezes.  How many of you knew that?  I didn't until a couple of years ago when I began traveling to Austria.

We now have a new organization in Austria called the GesundheitsVerein which is a non-profit health "club" for those interested in learning and sharing the best health information around the world.  Their motto is:

Health and Lifestyle - Dressing Up Your Zucchini

Health and lifestyle ... it can mean many things ... like dressing up your zucchini.  When your plants begin to produce massive amounts of veggies sometimes you run out of ways to prepare them.  You begin to search for ways to dress them up in a new dish ... and on the other hand sometimes you just "dress" them up and put them back in the garden!

After this guy came back in from guard duty in the garden I chopped him up with some eggplant, onions, yellow pepper, tomatoes and made an awesome ratatouille .... see recipe below:

Ingredients 


  • 1/4 cup cold pressed olive oil
  • 1 large onions, chopped
  • 3 cloves garlic, minced
  • 2 eggplants... about 2 pounds, I took about half the peel off chop into 3/4-inch cubes
  • 1 gigantic zucchini about 2 pounds, cut into 1" cubes
  • Coarse salt and ground pepper
  • 1 yellow bell peppers, cleaned, cut into 3/4" cubes
  • 4 ripe tomatoes, diced 
  • 1 teaspoon dried thyme
  • 1/2 cup chopped fresh basil
  • 1/2 cup freshly shredded Parmesan cheese


Directions

In a large saute pan with lid heat oil over medium heat. Cook onions and peppers, stirring occasionally, until soft and glassy.
Add garlic; cook until fragrant
Add tomatoes and thyme ... cook until they begin to break down
Stir in eggplant and zucchini; season to taste with salt and pepper.
Reduce heat to medium/low and let simmer partially covered until veggies begin to soften ... 15-20 minutes
Remove from heat
Stir in half the basil and reserve the rest for garnish.
Sprinkle Parm cheese on top
ENJOY!

Actually this can be eaten hot or room temp.  We had some leftover that I served with dinner and just had it at room temperature and I think it was even better!

Now, that our healthy lifestyle is evolving ... we do eat meat ... just not a lot of it ... and only when we crave it.  Certainly not everyday and in the summer heat with all of our fresh veggies from the garden it only makes sense to harvest, wipe the dirt off and eat!

Health and Lifestyle - Strawberry Fields ... Forever!

Health and lifestyle ... what could be better for your health than deliciously ripe strawberries?  The strawberry season is drawing to a close in Niederösterreich (Lower Austria) so we decided if we were going to hit the "U-Pick" fields and get the freshest berries, today would be the day.

We "googled" the closest field to the house and out we went at 7:30am to the farm.  It was already in the low 80's ...
"Erdbeer-Land" means Strawberrry Country ... YIPPEEEE!!!!


Only a couple other people out picking in the fields ... the berries are mostly gone, but the ones we find (over 10 pounds worth) are the sweetest fruit imaginable.  My husband ate almost as much as he picked!


It was like going on a treasure hunt ... move a few leaves and find a few berries ...


By the time we finished up we had two of the baskets filled to the brim and it was after 9:30am!

Healthy eating has a lot to do with eating seasonally ... when it is local and ripe, then the time to eat it is now.  From the vine to my mouth .. maybe 30 seconds.  I am sure that 99.9% of all the nutrients are still active.

Health and Lifestyle - Cooling Down in St. Corona

Health and lifestyle ... what to do to lead that healthy lifestyle that you crave?  Sometimes you have to sit back and take the time to smell the roses ...



It has been HOT here in Austria ... close to 100 degrees for the last 4 days.  So what better way to cool down than to visit an old friend up in the mountains at his home in St. Corona?  We hopped into the car and drove up for dinner and a relaxing evening ... enjoying the view from the balcony.  A picture postcard view of the valley below.


The temperature dropped a good 10 degrees at 3000 feet .. what a pleasant relief!  Then our friend uncorked  a delicious red wine from one of the local heurigens (Austrian wine house)



Then on to a light dinner ... a Greek salad ... eating healthy is a key to living longer!


Crunchy and tangy, this refreshing salad really hit the spot.  Made with:
  • Chopped pitted green olives
  • Cucumber
  • Celery
  • Light green peppers
  • Sun ripened tomatoes
  • Red Radish
  • Feta cheese
Dressed with:
  • Olive oil
  • Equal parts Apple cider vinegar & water
  • 1T. honey
  • 1/2 tsp. dried oregano
 Of course, there was  crusty rye bread ... YUM! 

So, my friends, living a healthy lifestyle should be something that you work at everyday, but it shouldn't be hard work, but enjoyable.

Health and Lifestyle - UFO has Landed in the Garden!

Health and Lifestyle is what living is all about.  I wrote about my garden in my last post, but I failed to mention the UFO that landed!

Let me start at the beginning ... I live in Austria where they speak (and write) in German ... I am an American who speaks and reads in English and while I am learning the "mother" language of Austria, I do have some challenges.  I thought I had planted red cabbage ... the seed package I read (or so I thought) said red cabbage, but as the days went by I simply could not conceive how this growing plant would turn out to be a head of red cabbage.  I even "googled" pictures of growing cabbage ...



A few more day passed and as I searched on the internet I found it!  Yes, my friends, it is indeed red,  not a cabbage, but a Red Kohlrabi.  Well, until very recently I didn't know about Kohlrabi at all, let alone red ones!


I learned more.  It seems that Kohlrabi (sometimes called a German turnip) is not so popular int he US, but it is everywhere in Austria.  They steam it, make stews, eat it raw in salads and they even BBQ it!  It tastes kind of like a fresh broccoli stem ... juicy and crunchy.


Here is the nutritional "scoop" on Kohlrabi

  • Low in calories, only 19 for a half cup raw, sliced
  • High in dietary fiber, 2.5 grams for one-half cup
  • Potassium content peaks at 245 grams for one-half cup
  • Vitamin content for that same one-half cup includes 25 I.U. vitamin A, 43.4 mg. vitamin C, 11.3 mcg folic acid, and 16.8 mg. calcium



Well, today was harvest day for this particular "bad" boy!  My husband peeled it and then shredded it like a slaw then and I whipped up a tasty dressing for it ... YUM ... crunchy and refreshing!

Here is my recipe for my "Sweet Basil Dressing":

  • Juice of 2 lemons
  • 1/4 cup water
  • Pinch of salt
  • A couple of twists with your pepper mill
  • 1/2 cup garden fresh basil
  • 1 T. honey (to taste)
  • 1/4 cup olive oil
  • Handful of sunflower seeds

Toss everything into a high speed blender and pulse until smooth and creamy.  This dressing tastes even better the second day .. if you have any leftover!


It is all about how you choose to live your life ... and right now life is very good.

Health and Lifestyle ... Watch My Garden Grow!

Health and lifestyle for me means eating great food.  After doing my due diligence I realized that many of the "fresh" veggies that I bought in my local supermarket came complete with a passport ... by that I mean it has traveled long distances ... many times it has crossed borders coming to me.  So, if you figure out the timeline here ... someone picks it, it is processed, shipped many miles to the wholesaler then sent on to the grocery store you are probably talking about a minimum of 1 week.  How many of those terrific nutrients are still alive in those "fresh" fruits and veggies? This reason we decided to grow our own.


We are located just a little south of Vienna in Austria and this will be are first time growing veggies in a cold climate ...  to start off we potted our seeds the end of March and kept them in the boiler room in the basement ... good thing too, because we actually had a light snow on Easter!

The decision was made to go with raised beds for a couple of reasons.  Easier to keep the critters out and easier for us old folks to weed!


They have a saying in Austria that basically means you shouldn't plant before the first of May, but we took a chance and got a few things into the beds the end of April.


This really being our first time "farming" we didn't realize how large everything would get ... tomato plants shooting up, broccoli bushing out and the zucchini's, well if you have gardened before you are probably laughing right now!


This is mid June ....


Well, what can I say?  We have added a small greenhouse and 2 more raised beds ... did I mention we have pumpkins and sunflowers planted in the front yard, also?


It seems that we are addicted to our garden and the delicious food that it produces.  We have been eating and juicing our "greens" two times a day and we just planted more lettuce ... the reason for the last raised bed!  The fresh herbs are totally awesome ... we use a lot of parsley, basil, chives, dill and cilantro and it seems the more I cut it the faster it grows!


Wow, I never realized how special it is to go outside to clip lettuce, gather some basil, cut a tomato and then walk into the kitchen to prepare an awesome salad!  From the dirt to the plate in 10 minutes ... how cool is that?

Changing old habits can be challenging.  It takes courage to take that first step.
